I now only bake 3 loaves of sourdough a week for personal consumption. It's chewy, has a hard crust and I don't use any olive oil. The ingredients are just flour, water salt and malt (no sugar). My mother (starter) is kept in the fridge and I feed her every time I bake bread. These pics were taken when I had electric ovens. Now, for my sins, I only have a gas oven. It's a totally different thing but eventually, with the help of a few oven thermometers, I learned how to make excellent bread in the gas oven and it tastes and looks exactly like the bread from the electric oven.
My sourdough is hard core. Here's the recipe. It caters for up to 36 loaves.
